我的 Red velvet Cake 终于出炉了!自从那天第一次吃了这款蛋糕后就一直念念不忘。喜欢它那酸酸甜甜,乳酪加柠檬的清香,可可的浓郁香,扎实又不失湿润的口感,不油腻,真是太好吃了!
深深被这款蛋糕美丽的外表及其独特味道迷住的我,于是就上网去查询食谱,结果发现原是要添加蛮多份量的红色素,蛋糕才有这么美丽的红色外表,我被吓着了!我本想用甜菜根的汁来替代色素,后来又看到有网友用红鞠粉,所以我就跟着用了。因为没添加发粉,做出来的蛋糕不会发得很高,而且颜色也没那么鲜艳,但是经过扮美美后,是不是也很像外面卖的一样呢?
材料:
75克 牛油
35克 植物油(玉米油)
130克 细砂糖
1/4茶匙 盐
2个 鸡蛋
1茶匙 苹果醋
1/2 茶匙 香草香精
150克 特幼面粉
10克 可可粉
2大匙 红鞠粉
1/2 杯 白脱牛奶
Ingredients:
75g butter
35g vegetable oil (corn oil)
130g caster sugar
1/4tsp salt
2 eggs
1tsp apple cider vinegar
1/2tsp vanilla extract
150g super fine flour
10g cocoa powder
2tbsp red yeast rice powder
1/2 cup buttermilk
做法:
1. 预热烤箱至160⁰C。 将6寸圆模铺上油纸。过筛并混合面粉、可可粉与红鞠粉。
2. 搅拌牛油、玉米油、细砂糖与盐至松发,加入鸡蛋,每次一个,继续搅拌至蛋完全被吸收后再加入第二个。
3. 加入苹果醋与香草香精,拌匀。
4. 分三次拌入筛过的粉类,交替拌入白脱牛奶(分两次),搅拌均匀成光滑面糊。
5. 将面糊倒入铺了油纸的6寸圆模里,以160⁰C 烘约40~45分钟或至熟。
6. 将烘好的蛋糕取出,揭开油纸,置于网架上待凉。
7. 将冷却后的蛋糕横切成三片,用奶油乳酪糖霜把蛋糕片夹好,把整个蛋糕涂上一层奶油乳酪糖霜。冷藏后即可切片食用。
小提示:
1. 如买不到红鞠粉,可以改用甜菜根的汁(大约5汤匙或更多)替代。
Method:
1. Preheat the oven to 160⁰C. Line the 6-inch round cake pan. Mix and sift the flour, coco powder and red yeast rice powder.
2. Beat the butter, oil, sugar and salt until fluffy. Beat in the eggs one at a time.
3. Stir in the vinegar and vanilla extract.
4. Add the flour mixture in 3 batches, alternating with the buttermilk, beginning and ending with the flour, until just combine.
5. Pour the batter into prepared pan. Bake in preheated oven for about 40~45 minutes or until a toothpick inserted into the center comes out clean.
6. Remove the cake from oven, discard the paper and leave the cake on a rack to cool completely.
7. Slice the cake into 3 layers horizontally. Sandwich the cake layers with the frosting, cover the top and side with a layer of frosting. chill before served.
奶油乳酪糖霜 / Cream Cheese Frosting
450克 奶油乳酪
120克 无盐牛油
100克 糖粉
1.5 小匙 柠檬汁(1小匙半)
1/4小匙 盐
Ingredients:
450g cream cheese
120g butter
100g icing sugar
1.5 tsp lemon juice
1/4 tsp salt
做法:
1. 将奶油乳酪,牛油搅拌至松发。
2. 加入糖粉及盐,继续搅拌至顺滑。
3. 加入柠檬汁拌匀即可。
Method:
1. Beat the cream cheese, butter until fluffy.
2. Stir in icing sugar and salt, beat until smooth.
3. stir in lemon juice.
