这是一位朋友的印尼女佣教我做的传统式咖哩卜,这位女佣曾在不同的家庭做过工,也学了不少雇主的拿手厨艺。我很幸运的遇见了她,她很乐意的教我,让我在想吃时,可以亲手做一做,非常感谢她!
材料:
500克 普通面粉
1/8茶匙 盐
3汤匙 热食油
2~3大匙 马芝淋
250~300毫升 水
馅料:
2粒大洋葱(切细丁)
5粒 大马铃薯(切细丁)
25克(1小包) 海鲜咖哩粉
水适量(与咖哩粉拌匀)
糖、盐适量
咖哩叶(切碎)
油
水
5个 煮熟鸡蛋(每粒切成6瓣)
做法:
1. 将洋葱、马铃薯切细丁,咖哩叶切碎,咖哩粉加水拌匀。
2. 馅料:以少许油爆香洋葱与咖哩叶后,加入马铃薯与少许水炒匀。
3. 加入咖哩粉炒香,再以糖和盐调味。
4. 面团:面粉加入适量的盐拌匀。油烧热后倒入面粉内,随即加入水(先倒入2/3的水,其余的在加入马芝淋后,才一点一点,慢慢再加入),以筷子搅拌均匀。
5. 加入马芝淋,搓揉均匀成柔软面团即可。
6. 包裹:将一小份面团搓成圆球,压扁,再将馅料包入,将收口捏紧。
7. 将包裹好的咖哩卜放入热油里炸至金黄色即可。
Ingredients:
500g plain flour

3tbsp hot cooking oil
2~3tbsp margarine
250~300ml water
Filling:
2 onions (cut into small pieces)
5 big potatoes (cut into small pieces)
25g (1 small packet) seafood curry powder
some water (to mix with curry powder)
sugar and salt to taste
curry leaves (cut into small pieces)

5 hard boil eggs (cut into 6 pieces each)
Method:
1. Cut onions, potatoes and curry leaves into small pieces, mix curry powder and water until well combine.
2. Filling: heat up some oil in a pan, fry onions and curry leaves until fragrant, add in potatoes and some water, fry well.
3. Add in curry powder, fry until fragrant, then season with sugar and salt.
4. Dough: Add some salt into flour, mix well. Heat cooking oil then pour into the flour, quickly pour in some water, mix well with a chopstick.
5. Add in margarine, knead the mixture into a soft dough.
6. Wrapping: Divide the dough into small balls, then flatten each piece and wrap with the filling.
7. Fry the puffs in hot oil until golden brown. Serve.
小提示:
1. 不同牌子的面粉,吸水量会有所不同,因此在搓面团时,水份和马芝淋可以酌量的一点点加入,如搓好的面团太湿,可加入少许的面粉,但不要太多。
2. 馅料里的马铃薯一定要炒到入味,糖和盐的份量因个人的口味而可以增加或减少。
3. 炸咖哩卜时,如要炸出均匀的色泽,锅里的油要多,避免咖哩卜碰触到锅底,不停的翻转咖哩卜两面。(我没这么做,因为不想浪费太多的油)
